This is a really good book about Risotto. The recipes range from light to deliciously heavy and creamy. There are also very basic instructions and tips for the beginning Risotto maker.

I have seen risotto prepared in many different ways, unfortunately there is only one way to properly go about the task. Arborio or Carnaroli rice depending on your choice requires a certain method to extract all of the creaminess from the rice while maintaining a good al dente texture. In this book, the author here has done a wonderful job of illustrating the proper way to produce a quality risotto. Nice photos to give you ideas as risotto leaves much room for experimentation once you have mastered the basics.

Risotto is a wonderful, filling, nutritious meal and can be simple or sophisticated, served at family meals or dinner parties. (It also makes great left-overs!) Whether you're browsing or planning a menu, this book will fulfill your appetite. Each recipe is beautifully illustrated and presented on a separate page with easy-to-follow instructions. Several of the recipes I've tried have become family favorites. Just serve with a fresh baguette, and some can be considered one-dish meals.

`Fagioli' by professional cookbook writer Judith Barrett is quite clearly subtitled `The Bean Cuisine of Italy', as it is all about cooking with Italian beans.
This book immediately succeeds at the first and most important task of a special purpose cookbook in that it has made be really care about and be interested in its subject. It accomplishes this feat first by being a very attractively designed hardcover book with a very well sewn binding which nicely lays flat where you want it to. Next, it's modest artwork and typography complements its presentation so that it is simply a pleasure to read. No eye strain here. Congratulations to the Rodale Press for packaging a very nice volume. Finally, the all the introductory material is accurate to the best of my knowledge. There are no lingering myths about the risks of salting cooking beans, there is no doctrinaire approach to having to soak beans, and there is a tolerance, with warnings, about using a pressure cooker to cook beans, as the sine qua non of bean cookery is like barbecue, `low and slow'. The only hint of elitism I detected was the statement that somehow, the Italians have mastered a secret to a tasty cooking of beans which is beyond we poor New World neophytes who have been cooking beans for less than 400 years. I will concede that the knowledge of good bean cooking is probably a bit harder to find outside of Boston, but I think we have the hang of it.
One of the most liberating revelations was the fact that Italians actually cook a lot with dried beans imported from the New World, as North America exports much more than it consumes, and Italy consumes all it produces, so no dried Italian beans sit on the grocery shelves beyond a year of harvest, especially as date of production is stamped on the bean packages just as we do for bread and milk.
While my hero, Alton Brown has remarked that bean cooking is remarkably uniform, far more consistent across species than with grains, he certainly did not take into account the variety of beans covered by this book, which deals with at least fifteen (15) different species of beans, some of which have no substitutes if the real thing is not available. Fortunately, the unique varieties of beans, the chickpea and the fava are commonly available in the United States. Every other type of bean has more than one commonly available substitution, which is important since there are some beans which are available only in Italy and which do not travel well.
The recipes are organized in exactly the way one would expect from an Italian cookery subject, with chapters on:
Primi Piatti, divided into sections on Antipasti, Insalate, and Contorni (Side Dishes)
Zuppa di Fagioli, divided into sections on Minestre, Zuppe (Thick Soups), and Passali (Creamy Soups)
Pasta e Fagioli, of course
Secondi Piatti, divided into Fagioli e Farinacci (Grains), Fagioli con Carne (Meat), Fagioli con Selvaggina (Poultry), and Fagioli con Pesce (Seafood)
I have never, up until today, been quite clear on the difference between Minestre and Zuppa. I always thought of Minestre as a relatively thick soup, especially as prepared in Florence, for example, but the Tuscan bean soup recipe trumps all visions of soupy thickness by including six different varieties of beans.
This division of recipes does not mean there is no seafood in the salads or antipasti. In fact, the salads include tuna, shrimp, and octopus as co-conspirators in the salad recipes.
This book gives an excellent discussion of non-bean ingredients for its size and does the especially good service of telling us where we can get these ingredients at the same place where their use is discussed. This may not be the best arrangement when we pick up the book later as a reference, but it gives a very good sense of how easy or how hard it is to get some of these things such as bottarga, guanciale, and porcinis.
One could argue that if you have a library full of books by Marcella Hazan, Lydia Bastianich, and a platoon of other Italian cooking writers, what do you need with this book? My first answer is that unlike most general works written for Americans, it tells you what kind of beans are actually used in these recipes. Next, like every special subject book, it is simply a lot easier to find a recipe to fit your need for beans than rummaging through the index of six other books.
As expected from a professional cookbook writer, all the recipes are exceptionally well written and there is a delightful variety in the selection. I cannot guarantee that this book will remove the pasty flavor of beans from your preparations (especially since we have no way of knowing how old our dried beans are), but it will make every effort to do so. The rest is up to you.
Very pleasant, very informative, and very tasty read. Recommended.

This book is for those that understand stitchery with ease. The designs are really good to use with anything, even making bookmarks. This book is for the advanced cross stitcher, or embroiderer.

I like the designs, but the total black and white with tiny blocks makes the patterns hard to read. The designs are good, but lacking in color, so if you feel like playing around with them a bit, this is a great book - especially considering the price. Otherwise, I'd probably recommend staying away from it and going with a more expensive, though much more readable and more colorful alternative.

This book has many different designs available. The designs can be a bit small, and a bit difficult to read. I highly recommend taking these charts and enlarging them before starting work on them. There are a great variety in designs, some will take a while to complete, while others can be completed in much less time.

If you're a true fan of Celtic art, you'll probably enjoy these patterns, but be warned; these will not appeal to everyone. Some of the patterns are outstanding in their design; others are just dull. While the interesting patterns out-number the boring ones, the color choices are bland (unless you really LOVE earth tones) and some of the charts are made up of too few stitches to represent the original designs. Still, if these things don't bother you, I strongly recommend this title.

Over 350 Celtic charted designs: endless possibilities.......2007-04-19
This compact book contains over 350 charted designs. While I primarily work these designs as counted cross stitch, they could be incorporated into a range of handcrafts.
As commented by others, the charts are small and many of us would need to magnify charts for ease of use.
From a personal perspective, I find that photocopying the chart at around 150% also provides me with a working copy I can write on in terms of yarn colour choices.
Recommended to those who love Celtic and Celtic inspired designs and can see a range of possible applications.

While I have heard complaints that this book is in black and white, I find that to be an advantage. I find colored charts are sometimes distracting, especially if you are trying to use the charted design for something like filet crochet. I love the variety of the designs and how one design leads to the evolution of another. Highly recommend this book for any type of celtic design work!!

I have purchased both Celtic design books from Dover. Good designs, but the lack of color in the designs and the hard to read black and white charts are a hindrance. The one thing they really have going for them is that it's just hard to find other designs like these in color. So for the price, you can always enlarge these charts and play around with the color on your own.

This book has many excellent designs. As an avid cross stitcher I love to pick up books. This book has many, and I do mean many designs with over 100 to its credit. The designs are flexible enough that they can make pictures, pillows, or a special addition to a favor. One draw back, be prepared to go to a copy shop and blow up the designs, they can be very small. I give it 5 stars despite this major draw back. The quantity of designs, the quality of the designs, and the fantastic price, well they can't be matched.

What suprised me even more was that the man who saved all those Jews was a Japanese, if i remember correctly where an axis power during WW2 and allied with the Germans. Sharing a positive side of the Holocaust with young readers.......2005-05-06
I used this book as an introduction to the Holocaust for my 7-year-old. Rather than starting him off on the atrocities, I used this well-written and beautiful book to start him off with learning that we Jews were once in grave danger, and there were some people who took care of us when they could, even though it was a difficult choice.
3/4 of the way through reading the book out loud to my son, I started to cry a little. The story is poignant, of course, but more than that, the writing captures the meaning in such a simple and straight-forward way.
I would recommend this book to anybody, Jewish or not Jewish. It is an excellent introduction to the concept that life can be dangerous, along with the idea that good people exist, AND that any one of us can choose to be a person who makes a difference.
The writing makes it clear that Sugihara was risking his and his family's lives to do the right thing. And, the writing makes it clear that being the child of someone who is willing to do the right thing can be difficult, but well worth it.

Chiune Sugihara was a Japanese diplomat in Lithuania in 1940. As the Germans invaded Poland, thousands of refugees flooded into Lithuania begging for visas that would allow them to travel to safety. Despite repeated orders from his government, Sugihara signed travel visas around the clock and saved thousands of Jewish lives. He followed his conscience knowing full well the social and professional consequences that would follow. The drama of the events and the courage of Sugihara and his family make this true story unforgettable. Dom Lee's sepia tone illustrations complement the story and convey the desperation and fear of the refugees and the bravery of the Sugihara family.

This is such a powerful little book. I used it with my sixth grade class as part of a unit on Japanese internment camps with the books Farewell to Manzanar by Jeanne Wakatsuki Houston and Under the Blood Red Sun by Graham Salisbury. While these books are excellent at helping students to understand what happened to Japanese Americans during World War II, it wasn't until I read them Passage to Freedom that the students began to more fully understand that they could take a stand as individuals to stop prejudice. Each of us, if we are brave enough, has the power to make a difference. Chiune Sugihara was brave, and he was determined to do what he knew in his heart was right. Because of him, thousands of Jews escaped from certain death. This book is priceless.

Pasaje a la Libertab is the Spanish edition of Passage to Freedom, the true story of the "Japanese Schindler" who saved thousands of Jews during World War II. In 1940, five-year-old Hiroki Sugihara, the son of the Japanese consul to Lithuania, saw from the consulate window hundreds of Jewish refugees. They had come to Hiroki's father with a desperate request: Could he write visas for them to escape the Nazi threat? When the Japanese government denied his requests, Hiroki's father turned to his family. This story chronicles their amazing act of humanity.

This is the Spanish version of Passage to Freedom, a 30-page picture book. A remarkable and inspiring story of a Japanese diplomat who disobeyed his government by writing hundreds of visas to Jewish refugees trying to flee Lithuania. With compassion and courage, Sugihara places his own future in jeopardy to save others. Excellent! Don't miss the afterward to see what happened to the Sugihara family.
