            At first, I was amazed by the ideas of the book, but as I read it more thoroughly and tried to implement it I saw how out of date on new research this book is! I am a cytotechnologist and a mother and a wife of a cancer survivor, so I definitely follow up on new research related to chemical balance and metabolic processes of the body. This book needs a huge review by a nutritionist and an MD of a relevant field, perhaps even someone condacting research on metabolic processes of the body.

            So this is a good book to start from, but the whole book is only an introduction to the matter. One must read other authors that wrote about acheaving balance in your metabolism, and then come back to the food combining principle and adjust it according to one's current health state and life stile.

            The original "Bible" for Food Combiners, this book gives one of the most comprehensive and convincing explanations of Dr William Howard Hay's food combining plan. With a resounding endorsement from Sir John Mills (a follower of the Hay Plan since 1942, and great advertisement for it!) in the foreword.

            The book explains clearly how food combining is based on the premise "don't mix foods that fight". According to Dr Hay, the foods that fight are mainly concentrated proteins and starches. Our digestive system, says Dr Hay, is set up to deal quite separately with proteins and starches. When eaten together, neither is fully digested. Simply by keeping proteins and starches for separate meals, this book claims, you will feel the benefits of more complete digestion. After a few weeks, it also claims, this in turn leads to higher energy levels, and a "satisfied" body which rarely craves any particular food, because it is fully nourished.

            Those who have a real interest in nutrition are likely to find that this book makes fascinating reading. However, with a large chunk of the book devoted to explaining the theory of the Hay Plan, and how it can help people with a variety of ailments, particularly any related to the digestive system, those who are not too interested in theory may find it a little dry. This said, it is easy enough to skip to "Part Two - the Hay System in Practice", where you are given plenty of advice about how to get started, an easy reference diagram to remind you which foods are compatible, and a whole section of recipes which comply with the Hay System's "rules".

            Most people who try the Hay Plan, or Food Combining, are converted within a few weeks. For myself, my energy levels were higher than they had been for several years, after just 2 weeks of sticking pretty strictly to the "rules" given in this book - so I, too, am a devotee. The biggest barrier to sticking entirely to the Hay Plan for any real length of time, is the way in which our Western diet constantly presents us with protein/starch mixtures - for example, meat and potatoes, protein fillings in sandwiches, sweet starchy desserts after a mainly protein meal, and drinks (such as wine and coffee) as an integral part of a meal (the Hay plan recommends drinking plenty of pure water, but avoiding drinking anything within 1/2 hr either side of eating, as this dilutes the acid or alkaline medium of the digestive juices, hence restricting the efficiency of the digestive process).

            Despite these difficulties, how many "diets" do you know which allow you to eat any food you want, so long as you partner it with the right companions? The enthusiasm, dedication and sense of humour of the two writers manage to turn what could be a rather dry account of the "do's and don'ts" of food combining into an absorbing read. It was written some time ago, so the recipe section is a little limited, and there are much better Food Combining recipe books available today. However, if you want a handy reference/handbook for the simple, original Dr Hay's theory of Food Combining, you could do much worse.

            I'd recommend this book to anyone who wants to really take charge of their health and weight. A word of advice, however... do try to read the book fully, and really familiarise yourself with the concepts, the suggested way of "breaking yourself in" to this way of eating etc., before beginning on the Hay Plan. It will make it a much easier, gentler and more effective process. I leave the last word to the authors: "just try it for 2 weeks, then make up your own mind".

            I got this book to figure out the whole beans and grains/starch or protein thing. I am still lost on this issue. This book is no help to vegetarians. The words "vegetarian," "tofu," and "soy" do not even exist in the index. Very disappointing. I may keep it for the dessert recipes, but that's it.

            It's easy to forget that Jeff Smith, who ended his culinary career in the midst of a sex scandal filled with more questions than answers and who ultimately died in obscurity, at one time held the same place in the pop culinary world as Emeril Lagasse and Rachael Ray do now. It's a simple fact: sometimes otherwise great people do stupid things that utterly obliterate an otherwise stellar legacy. But no matter what the truth of the whole matter is, I have to agree with Alton Brown's two-liner review of Smith's original volume in his stellar "I'm Just Here for the Food": "I don't care what he does or did in his personal life. Everything in here worked back then and still does."

            Now over a hundred years old, Charles Fellows' Culinary Handbook, written for the turn-of-the-century American hospitality trade, was an answer to such tomes as Escoffier's Guide Culinaire, whose first edition had come out two years previous and was no doubt very close at hand in Fellows' trade, even as he sought to create a purely American answer to Escoffier's masterwork. And Fellows did produce a very solid volume -- practically anything that needs to be known about upscale American cookery circa 1900 is here, and it's very instructive to flip through the book and find out about lost culinary fashions and changes in meaning and technique over the years.

            In 1991, Jeff Smith and his sous-chef Craig Wollam released their updating of the book. This is important, since Fellows never made the splash he'd hoped to on the culinary scene, and much of the history behind it had been left in the past along with the Culinary Handbook. (Incidentally, despite Smith's failing health and increasing reliance on Wollam behind the scenes and on screen, this is the only one of Smith's books where Wollam recieves a coauthor credit.) Smith and Wollam give the book a much-needed dose of context, first and foremost, using the famously gluttonous railroad magnate Diamond Jim Brady and the ultrafancy New York restaurant Delmonico's (its last successor, the New Orleans location, now owned by Emeril Lagasse) as examples of what was popular on the tables of the 1900s. Much of the book recieves substantial annotation from Smith and Wollam, including a good number of recipes with modern appeal fully articulated from Fellows' concise descriptions and a section exploring the differences between 1904 and 1991 kitchen techniques.

            As essential as this book is for the historian of American food (and it's sad that it will probably never see print again because of Smith's fall from grace), it suffers from some grating flaws. The first is the fact that much of Smith's history must be taken with a grain of salt -- while Smith was an excellent cook and writer, he was known to play fast and loose with historical research, especially when religion was involved. While religion factors into only one or two of his books (particularly "The Frugal Gourmet Keeps the Feast" and "The Frugal Gourmet Cooks with Wine"), it does leave one with the need to do some extra fact checking when using this or any Frugal Gourmet book for historical research. The other glaring flaw is the layout -- while Smith and Wollam's commentary is clearly distinguished from Fellows' original work with different-colored text and a lighter typeface, it's unnecessarily difficult to figure out where one entry ends and another begins, as recipe descriptions really aren't meaningfully separated from the entry text at all. (If this were ever reprinted, William Morrow & Co would be well advised to redo all the typesetting in this book to remedy this fault, as it seriously impairs the readability in this book.)

            For whatever flaws the man had, though, Jeff Smith was an excellent writer and a culinary inspiration to millions. His work on salvaging this forgotten volume makes it a must-read for any student of antiquarian cooking, so if you or a friend is into that sort of thing, you must seek out a copy.

            In his book entitled Ethics for Fundraisers, Albert Anderson sets out to provide an ethical decision-making framework for practitioners involved in philanthropy: nonprofit staff and volunteers, professionals, and grantmakers. In essence, he hopes "to enhance the level of ethical fundraising throughout the nonprofit sector equipping development professionals and volunteers with the frameworks for understanding and taking principled action for preventing unethical behavior, and thus for building bridges of trust in the charitable community."

            Throughout the book, Anderson activates a methodical approach to guiding practitioners in ethical decision-making by fashioning what it means to think and act in an ethically responsible manner. He expands on ethical insights provided by classical and contemporary theorists, such as Aristotle, John Stuart Mill, and Immanuel Kant through several theoretical cases depicting issues likely to be encountered in the world of philanthropy. In overview, Anderson emphasizes the importance of developing and employing ethical frameworks which guide a set of primary ethical principles (i.e., trust, respect, beneficence) used in making and justifying sound ethical judgments when engaged in ethical decision-making. He concludes by presenting the need for philanthropic organizations to create and implement a code of ethics.

            In summary, Anderson makes a strong case for doing the right thing by presenting this book not as some typical self-improvement tool but rather as a scholarly book that emphasizes how to be ethically responsible in the profession of philanthropy. There appears to be a simplistic model to help guide one to think and act in an ethically responsible manner. This model involves the following steps: identify the ethical issue at hand and engage in a decision-making process to resolve the ethical tension. When engaged in ethical decision-making, according to Anderson, one must work from a developed ethical framework, such as utilitarianism or formalism, which guides a set of primary principles used for doing the right thing given the circumstances in a situation. Moreover, there lies great truth, in my opinion, in the information that Anderson presents throughout the book. For example, in order for a code of ethics to work, it must not be "printed and distributed merely to elicit good will" but rather be "woven strategically into the fabric of day-to-day experience" in the organization.In short, one cannot simply pay lip-service or simply verbalize that they make ethical decisions.

            I found this book to be particularly interesting, even fascinating in many ways. I highly recommend this literature for leisurely reading if one is interested in how to better serve philanthropic organizations and their recipients. Furthermore, one will find Ethics for Fundraisers easy to read and the information presented as useful and meaningful. Everything you need to know about making ethical decisions is right there in the book: the author has left no stone/rock unturned. Two thumbs up for Anderson. He has made a wonderful contribution to society as a whole and, specifically, to the philanthropic world.

                          Tooze's new biography is most useful for its ample use of primary accounts from Waters and those close to him. The book works best as a loving tribute to some of the most influential music of the twentieth century. Yet a facile prose style and a lack of contextualization make this a frustratingly one-dimensional biography. One finishes with only an impressionistic sense of this singularly important individual. Tooze pays virtually no attention to the women in Waters' life, and misinforms the reader by repeating apocryphal tall-tales. Mojo Man is a poorly written and shallow portrait of a mighty and deep historical figure.

                          I found this book hard to put down. Ms Tooze does an excellent job of portraying Muddy through a series of interviews with his bandmates. All of Muddy's former bandmates are full of praise for Muddy with the exception of the brilliant drummer Francis Clay who did not really get along very well with Muddy. What I particularly liked about the style of the book is the way Ms Tooze introduces Muddy's bandmates as they join his band. Marshall Chess chips in with quite a few interesting insights on the relationship of Muddy with Phil & Leonard Chess. I might not agree with all of Ms Tooze's reviews of Muddy's albums, but then it's simply a question of personal taste. Cheers & keep up the good work.

                          I have never read a book about Muddy Waters that proved to be so informative. I've been reading about Muddy for years and this book offered up new information of which I had not been aware. Ms. Tooze did a heck of a job researching this book. I beleive she had her MOJO workin'.
