I bought this book as I am studying to become a Nutrition Assistant, one of the possible job requirements is to educate people of various ethnicities re: their food and possible changes. Some of the sections on the history of the country and people were fairly dense to read. Some of the focus on food was somewhat repetitive, although I did find a few surprises. This book will probably be more useful for me if I do start counseling people.
Fine for beginning foodies but not for educational purposes.......2005-02-14
While comprehensive, this is too broad, too general and very stereotypical. Each 'cultural' group represented in the United States has the same diet as their fellows, it seems. It can also be very bland: since coming to the U.S., X group's consumption of 'junk' food, milk, and such, has increased.
There are also some serious mistakes. Scotch is the alcoholic drink while Scottish refers to the people. Yet, the authors insist on calling a particular people the "Scotch Irish" (a group not recognized in Europe).
Should you want very general information, without consulting specialist sources, this might be adequate for your purposes, but if it is to be used in, say, a course introducing topics of food and culture, this is not the book to use.
A Remarkable Achievement.......2000-05-28
Cultural Foods: Traditions and Trends, by Pamela Goyan Kittler and Kathryn P. Sucher, Wadsworth/Thompson Learning, Belmont, California, is a remarkable achievement. The authors, both nutritionists with a galloping interest in culture, have examined the many ethnic groups and cuisine traditions which comprise "what Americans eat." I was pleased to find that Native Americans, usually left out of such surveys, were included, along with Ugandans, Yemenese, Armenians, Basques and many, many others. Though initially written with food service professionals in mind, this is a book any foodie would devour. It starts with the food customs of individual countries and then looks at how arriving immigrants have adapted their usual ways of preparing foods to American ingredients and customs. The authors examine regional American foodways and typical specialties and provide an ethnic foods glossary, a lengthy bibliography and a dense index which allows the reader to dip in and out of the book with ease. Even the margins are peppered with food lore tidbits.

Chef's Recipe for Success is a winner!!.......2003-08-26
C'est magnifique!
As a former student of Chef Walter Talmage, I was delighted to find a copy of "Recipes for Success: A guide to advanced cuisine." My fellow students and myself knew that Chef Chaton and Chef Talmage were working on a book about culinary arts, however, some of us, including myself, never knew that the Chef's book was published. What a nice suprise to find it here at Amazon.com. Although the book was copywrited in 1988, it has some wonderful and practical snippets of information for any level of culinarian. Chef Roland Chaton & Chef Walter Talmage have created a book that takes the reader through the beginning steps of proper kitchen etiquette, to the pinnacle of classic cuisine. This book is perfect for any serious cook or chef. I am glad that I was able to still find copies of the book in circulation. It is now one of my most treasured cook books. It is also a constant reminder that popular culinary trends come and go, but the classics never go out of style. A great tribute to the legacy of Chef Roland Chaton.

Good Famous Restaurant Book. Not much else.......2004-06-14
Anton Edelmann's `The Savoy Cookbook' is a celebrity restaurant coffee table book which must be judged on merits relevant to its type rather than being judged by the same criteria as a regional cookbook or a social group fundraising cookbook or a teaching cookbook or an `everything you will ever need cookbook, or even a celebrity chef cookbook like those from Jeremiah Tower or Paul Bertolli, for example.
The criteria I deem distinctive of the `celebrity restaurant showbook' are:
Very effective pictures of food, building, and `cooks at work'.
A good story of the origins of the restaurant, its cuisine, and it's successes.
Interesting recipes, easily understandable by the amateur cook, in principle reproducible by same. At least some recipes should be practical for the home cook while retaining the `wow' factor the dish achieves in its very posh venue.
Facts which set this venue apart from all similar restaurants.
Success with these four criteria will get you four stars. To get five stars like `The French Laundry Cookbook' or `The Zuni Café Cookbook' requires that the author(s) transcend these criteria and give us something special in either great `do at home' recipes or even greater insights into the nature of great professional cooking.
There is also a criterion that is difficult to state clearly. This may be characterized as a `visceral' reaction to the whole package. Satisfying this criteria means that you come away from the book satisfied with a genuine interest in visiting this venue. The things that contribute to this feeling are often a modest, respectful attitude toward the reader and the restaurant's accomplishments and the effectiveness with which the experience at the venue is conveyed through words and pictures. It is difficult to get past three stars without this feeling.
In spite of some weaknesses in the more easily quantifiable criteria, this book hits the visceral target. I really wanted to stay at the Savoy Hotel in London, eat its food, and order room service there at 2 AM after a night at the theatre. Part of what promotes this interest is the unusual venue. The Savoy is not a single restaurant. Rather it is a very large group of kitchens with a very large staff serving three different restaurants, a very large banquet hall, many private dining rooms, and 24 hour a day room service to a large hotel. Another part of the interest is that the very first Maitre Chef des Cuisine at the Savoy was Auguste Escoffier, the legendary chef and codifier of modern French restaurant practice and the inventor of many famous dishes.
The other side of the coin is that the book simply does not succeed on some of the easy stuff. I give the book high marks for modestly telling an interesting story of the hotel and its food venues. I also give the book passing grades on its food photography and styling. The largely black and white photographs are a waste of space. Much is said about the art deco design of the hotel, with not one single photograph to demonstrate this. Much is said about the décor of some famous private rooms. Not one photograph of said private rooms. What photographs there are have no captions. They are eye candy with artificial sweetener.
The recipes are very well written, with one technical and one practical weakness. The technical weakness is in the excellent practice of giving all measurements in both metric and English units. The problem is that many of the conversions from one unit to the other are grossly inaccurate. Some conversions are off by almost 20%, where, for example one cup (245 milliliters on my Corning measuring cup) is translated into 200 milliliters. Almost all weight and volume measurements are off by 5 to 15 percent. The practical weakness is in the use of hard to find ingredients such as quail eggs and French melons. I really don't hold this against the book too much, as I believe that truly doable recipes is not what these books are all about.
I did pay special attention to the preparations I always use to judge a cookbook. Applicable recipes for this book were the omelet, the crepe, brioche, pasta dish, and chicken stock. In all cases, the level of detail is simply not suitable for instruction to an amateur. The book essentially assumes you already know how to make these things, especially the omelet. The brioche recipe probably works well in the hands of a professional chef, but it breaks several rules given by people who are truly teaching their readers how to make brioche. The crepe recipe is also much more suitable to a professional kitchen than the home kitchen as it skips some traditional steps and gives no hints about forgiving a bad first crepe.
I do think there are recipes here that a skilled amateur can successfully reproduce for entertaining. There are virtually no dishes here aside from a few of the breakfast dishes that would be at home on the family dining table.
If you are a collector of restaurant cookbooks, this is better than average, but not as good as the best. For those people I give it four stars. My official rating must be only three stars, though, since I wish to warn people that while this book contains recipes for exceptional dishes, these dishes are not meant for your daily meal, or even the Saturday night or Sunday afternoon family meal. And, the book gives little insight into professional cooking. In my heart it gets four stars. My head gives it only three.

What I like most about Zagat Surveys is the fact that, although Zagat works with travel agents to get information about the properties that are listed, the actual raters are not publicitists or travel agents. They are, in fact, people who have stayed at the resorts or hotels being rated, people who have stayed there, eaten there, used the facilities such as pools and spas, and who have experienced the hotels' service, both good, bad, and indifferent, and have no vested interest in reporting what they like or dislike.
Propertiy ratings cover the following categories: Rooms, Service, Dining, and Public Space. Costs given are the high season rack rates for standard double rooms. Since the ratings are averages of a great number of responses, individual biases probably don't affect them very much.
Properties are listed by country, city within the country, where applicable, and then in alphabetical order.
For convenience, there are a great number of cross references such as: Golf, Hiking, Historical Interest, Pet-Friendly, etc., and even by availability of Fireplaces.
Comments are those of people who have stayed in the properties, and range from raves to "rants."
All in all, If you are looking for an upper end hotel or resort almost anywhere in the world, this Zagat Survey should be of help.

good explanation of charting techniques, easy to read.
But then it gets vague, "...you are almost certainly to increase your profits measureably by marking your diary with lunar phases and Gann dates and by taking them into consideration..."
And in the putting it all together chapter, there is "learn the system, paper trade the system, stick to the system, review the system..."

The first part of this book details the advantages of commodity speculation as a business (no employees, low overhead, don't have to deal with customers etc.) Afterwards many forms or technical analysis are discussed. eg, chart formations, trading patterns (lindahl, three in a row, gaps). Examples of daily weekly monthly time periods are given. Volume, open interest, financial reports ( committment of traders) are also given. Support lines, seasonal cycles, secular cycles are also given. To sum it up, many systems are combined. The result is a huge number of support, trend lines, and opinions of which the price could go. This books covers many things in a very readable style, (eg. if you..." trade with out stop losses, you'll end up in the lillies") . It gives explantion, shows successful examples of something working, but gives no unifying technique. The reader is left with a bunch of ways to do technical analysis, but with more questions than he started with
