Will teach you a lot.......2006-12-07

This book is great! It doesn't have the insane range of traditional recipes of so many general books, but it will teach you very good ways to cook almost any kind of food. More importantly, it'll teach you how to get good results every time, and it'll tell you why recipes work or don't work so you'll be able to modify them to suit.

The first half of the book is general purpose and the second half is all about desserts. It's a bit of an odd balance, but it works. The dessert section is extremely effective. Baking is hard to get right, but Kimball explained everything so well that my first attempt at sugar cookies were a success.

The only negatives about this is that it's a compilation of two books, and therefore the tables of content and indexes are split. Also, the chapter divisions in the Cook's Bible are a bit strange, but since things are indexed so well it's not a barrier to use.

It's a tragedy this is out of print. I got my copy on the discount table and didn't realize what a lucky find I'd made at first, but it was one of the few books that were a must to find when I got divorced, because neither I nor my wife would part with it.

This is truly one of the best books I own. I get rave reviews from the cookie recipes, the pie crusts, the breads (I love to bake), and the best part is, he explains WHY certain things are added and used. He's already tweaked the recipes we've used for years, so they need little tweaking for ultimate perfection -- a must have if you can find it.

Rare culinary wisdom and great fun to read. Not gospel thought.......2005-10-11

`The Cook's Bible' by `Cook's Illustrated' founder and editor in chief, Christopher Kimball is a terrific culinary read, based on the unusual collection of subjects and opinions on a truly wide range of culinary topics. In many ways, the book reads very much like any one of a dozen `Cooks Illustrated' cookbooks, assembled from related articles from their magazine. The main difference is that the focus here is much more on equipment and techniques than on specific recipes.

One has to wonder what entitles the author to call this a `Bible'. What comes to mind is that this is a complete source of informantion and it's advice is simply beyond question. Unfortunately, the charm and interest one has in this book has nothing to do with either completeness or authoritativeness. While it is accurate on many, many things, it's word is not `gospel'!

The interest in reading this book comes mostly from the charm, wit, and good humor of the author's writing. I get the sense of reading a culinary Garrison Keillor in very much the same way I get that sense when I read James Peterson's books or even Julia Child's early books. You don't get the same bald humor that you see in Alton Brown's books, but the details of the culinary advice is as good or better than Alton Brown's recipes; however, Kimball's advice on cooking equipment is not as good as in Alton Brown's `Gear for Your Kitchen'. This is not because Brown's insights are deeper, it's because he focuses on laying out what it is you should do to evaluate what works best for you in the world of kitchen gear, and deals in general principles rather than on a magazine staff's notions of whats good and what's not. For example, while Kimball recommends Wustoff knives over all other makes, a recent `Consumer's Report' article rates Henkels knives above all others, including Wustoff. Now I am certain `Cook's Illustrated' has a better handle on what makes a good chef's knive, but this shows how different people see things differently. Another weakness of Kimball's equipment evaluations is that there is always the risk that one or more models on his evaluations will be discontinued.

One reason I enjoy reading Kimball so much, both in this book and in his `Cooks Illustrated' editorial pages is that it is such great fun to disagree with him on some points. For example, his very first sentence in the introduction states that there is little in common between gourmet cooking and home cooking (and Kimball's aim is to talk about home cooking). I argue that there is less difference between my cooking and that of Tom Colicchio and Alfred Portale than there is between the average weekend golfer and Tiger Woods. I use the same techniques, the same equipment, and very nearly the same quality of ingredients. Acting on Kimball's premise can lead to major mistakes, such as what I saw in the new Culinary Institute of America book on `Breakfasts and Brunches' where scrambled eggs and omelets are pictured as being only small variations on the same technique. Kimball, on the other hand, correctly treats omelets and scrambled eggs as two different techniques, even thought they start with virtually identical ingredients.

Like James Peterson, Kimball has a very commonsensical approach to things, which means he is much more inclined to see things for what they are. My favorite example is his take on the microwave. While it is certainly fast for certain jobs, this speed is actually a liability when it comes to many other jobs, as it means the margin between good results and a disaster is that much smaller. And, it is a technique which is highly variable by the amount of food put into the box. When one potato can take 8 minutes, two potatoes can take 15. This would not be true in a conventional oven or in boiling water. Another problem with the microwave is that checking on things and adding ingredients is a real nuisance, especially when the cooking vessel gets very hot. This down to earth approach will also reveal, now and then, some very counterintuitive facts about cooking methods. I know it is very hard to believe this, but Kimball explains, with practically no Alton Brown style handwaving, how and why a braised piece of meat (cooked for a long time half covered with liquid), will actually come out dryer than with some other methods if the cooking is done at too high a temperature.

Next to the extremely commonsensical approach to things, I really like Kimball's diagrams on how to do certain tasks. They are a model of how to effectively picture a procedure so the reader will understand what it is you are telling them.

Looking at the Table of Contents for this book reveals a really unusual collection of subjects. While there are recipes aplenty, the real focus is on general techniques and how to put them to best use. Several chapters really put a lie to the `home cooking' versus `gourmet cooking' difference, if one equates `gourmet' cooking with the kind of cooking done at Café Boulud Mario Batali's Babbo. These chapters show you how to improvise things such as soups, salads, dried beans, boning and butchering, and stuffing. My experience is that most home cooking is done with one eye on the open book, magazine, newspaper, or internet download with the recipe for your dish. Professional cooking, on the other hand, is often done by what's available that day (See Tom Colicchio's `How to Think Like a Chef').

This book is a great read and a great culinary education, even if you never make any recipes from it. Highly recommended.

Pretty good..........2003-01-06

I have the version of "The Cook's Bible" that came as one book together with "The Dessert Bible." If you are at all familiar with Cook's Illustrated Magazine, the format and style will be familiar to you. As for recipes, you will find it all in here -- product tests, exhaustively researched recipes for the food your mom and grandma used to make, etc. Some of the product testing is a little dated, but frankly, I don't base my purchases on Christopher Kimball's opinions anyway. I rely on an amalgam of information from many different sources to determine the best kitchen equipment, ingredients etc.

It's a great kitchen resource, but be warned -- if you own this, there's no need for you to buy "The Best Recipe," "The America's Test Kitchen Cookbook," or basically anything else Cook's Illustrated puts out, because the recipes are the same. This book is basically an expanded version of the non-dessert recipes in "The Best Recipe," which I also own. Cook's Illustrated is famous for recycling their recipes over and over and just putting new titles and covers on the cookbooks. If you buy this, don't buy another CI book until you're absolutely positive (through side-by-side comparison) that you need both.

The only other criticism I have of this book -- and all the Cook's Illustrated books, really -- is there's not a lot of diversity of cuisines involved. The magazine and cookbooks stick to tried-and-true staples of American (actually Northeastern American) food, and occasionally step a just a little over into ethnic cuisine. But if you're looking for explosive new tastes, interesting fusions of different cuisines, daring flavor combinations, new twists on old standards etc., these are not the cookbooks you're looking for. This would be a great gift for nervous new cook who's interested in learning the fundamentals and needs the reassurance of extensively tested recipes, but there's not a lot of excitement or intrigue here for a cook who's more or less mastered the basics of American cuisine and is now branching out into cooking the food of other parts of the world. A very nice basic "resource" cookbook to have, but definitely not the be-all end-all "bible" of cooking Kimball purports it to be.

If You Suscribe to Cooks's, You May Want to Reconsider.......2002-12-10

... If you suscribe to either Cook's Illustrated magazine or receive the hardbound annual editions, you may want to think twice about buying this book.
I couldn't pass up the combined Cook's Bible and Dessert Bible at Sam's Club today (which, I might add, doesn't accept book returns). When I arrived home and began to peruse my purchase I realized that I had many similar articles in hardbound Cook's annuals, sitting on my kitchen bookshelf. Fortunately, I only spent [money] for the three inch thick, hardback tome (Sam's Club Members, alert!).
It may sit under a bed until next Christmas and transform itself into the perfect gift for a culinarily-challenged family member.
I must also concur with Norman OK's assesment of dated comments and advice. Frankly, I've never found Christopher Kimball dull. With so much haphazard cookbook writing and editing out there, I appreciate his painstaking prose. No, he's not Jamie Oliver, but not all of us like the off-the-cuff approach.
If one is looking for a good culinary textbook, instead of a recipe book, this is certainly a strong contender.

Subtitled "The Best of American Home Cooking", this volume presents a series of master recipes within the context of recipe analysis, equipment recommendations and illustrated techniques. Chris Kimball & Co. define what they consider the perfect dish, talk to experts, test dozens of recipe variations and then report back. Like a Consumer Reports for cooking, they name names and tell you what brand or supplier of ingredients and utensils is superior -- and why. And like Harold McGee's classic 'On Food and Cooking', they explain the history, the chemistry, the physics .... whatever interesting facts help explain what goes on in your kitchen. It really enables you to experiment more intelligently. One caveat: if you are a curious cook, give yourself some extra time to read the always informative and entertaining chapters leading up to the recipes.

I own about 60 food and cookbooks. Many are useful for a few recipes and a few are regularly useful, but I would rank The Cook's Bible as one of the top three I own. Recipes are consistently, and authoritatively, first rate -- and delicious.

Subjects include equipment for the kitchen, using a microwave oven, how to use knives, potatoes, steaming vegetables, roasting vegetables, how to build a salad, dried beans, shellfish, pasta, fish and shellfish, frying or roasting a chicken, turkey, stews, stocks and sauces, barbecue, pizza, stir-fry, yeast breads, eggs, cakes, pies, cookies, brownies, souffle, and baked and poached fruits.

Line illustrations and charts augment the text, and there is a comprehensive index.

Highest recommendation for curious cooks.

I'm an experienced cook, but still learned a thing or 3 when I read this book. While Christopher Kimball's food preferences don't always match my own (taste is subjective & personal; no one can come up with THE perfect recipe for everything, because there's bound to be at least one person that won't like it), I enjoy reading about his experiments in the kitchen--what worked & what didn't. Of particular interest to me was the bread section. It was indeed a revelation, for example, to read that yeast doesn't have to be proofed. This information alone, IMO, was worth the price I paid for the book.

Complete waste of time.......2001-01-23

Unfortunately the recent bull market has generated an entire group of would-be financial experts. They write useless books on the subject they have hard time grasping. This book is a good example of a book that can actually hurt you as an investor. Mr. Kazanjian obviously has little or no idea about such things as asset allocation and modern portfolio theory. His bright idea is: "Hey, High Tech is hot, put your money into it!". I wonder what exactly Mr. Kazanjian would tell his readers know, when Nasdaq is down, bull market is over and his readers actually lost money. Complete and utter waste of time.

Growing Rich With Growth Stocks.......2000-04-30

Don't buy the book for an entertaining read, unless you just enjoy reading about the personal home life and/or chidhood of famous investors. I found that part irrelevent and very boring.

The book is well worth its price, however, for the top ten growth stock picks by each of the five featured investors. That's really the only information of value in the book, but they probably couldn't sell very many copies of a 5-page book, so you're stuck with the filler.

Common Sense Approach to Investing.......1999-08-22

While this book might not be flashy enough for today's dot.com crowd, which thinks it can make a fortune through rapid day trading, I found it to be excellent reading for those who want to build a solid, long-term stock portfolio. My guess is if you follow the advice in this book, you'll make a ton more money than you will trying to play the day trading game. What's more, I found the investor biographies to be very interesting reading. It was a nice break from other investment books which seem to overlooad readers with a bunch of numbers and jargon. I especially recommend this book to readers who are rather new to investing. It is a fun read that's easy to understand.

Too much idle chatter and not enough advice.......1999-08-05

Over fifty percent of this book is filler, most of it biographies of fund managers and descriptions of their home lives. Most of the advice is pretty generic, none of which gave me any better insight on how to pick growth stocks.

Vapid and poor production qualities.......2003-05-08

This book appears to be a set of photocopies of a book in the public domain. The photographs are almost impossible to discern. There are many pages that are just plain missing!!!!

The book itself gives a brief overview of McKinley's life and career. It was written shortly after he was assassinated, though, and reads like a long eulogy. As a matter of fact, page after page is filled with directly quoted excerpts of actual eulogies given at the time of his death.

Interesting historical artifact. Not serious history.

In the century since his assassination, William McKinley's reputation hasn't quite lived up to his title-page billing here as "the immortal statesman, soldier, orator, and patriot," and his "great and grand career" isn't quite so well remembered today. In his own era, though, McKinley was honored and popular. And in the context of his time, this memorial book is an enlightening, and even useful, read.

Much of the book focuses on McKinley's assassination, making this sort of a prototype of William Manchester's "Death of a President," about the Kennedy murder. But there is also a decent biography of the man, the text of several of his speeches, and a number of well-executed illustrations and portraits. I was surprised by the in-depth analysis of the anarchist movement (including an entire chapter on Emma Goldman), and there are also sections on "our two other martyr-presidents," Lincoln and Garfield.

You won't find any bad things about McKinley here ("No figure of modern American history appeals so strongly to the patriotism and love of the American people as William McKinley," p. 3). But taken itself as a memorial of the man's time, this title does help add to our understanding of this president who, more than almost any other, helped push America down the road to Empire. And that makes it a useful resource.
