            Jaques Pepin may be unique among American culinary figures, as he is both a widely recognized master chef who is also a leading culinary educator to both professionals at the French Culinary Institute and to laymen through many books and PBS series. He is also closely connected to American culinary aristocracy by association with Julia Child, Craig Claiborne, and Pierre Franey, with whom he worked for many years. One small sign of his renown is that when he happened to appear on the Rocco DiSpirito reality show, `The Restaurant', both Rocco and the executive chef of the restaurant literally fell over one another to show Jaques their regard for his work.

            This volume, `Jaques Pepin Celebrates' is, in many ways, the album of a live show of his greatest hits, where recipes and techniques from many earlier books are reprised, with new arrangements. This means the value of the book to you will directly depend on how many other of Pepin's books you already have and how much you specifically like his take on cooking. In other words, how big a Jaques Pepin fan are you?

            The 26 episodes in the PBS series on which this book is based are based on menus for major holidays and other special occasions. The material in the book, however, is very wisely organized around the traditional French cuisine headings of `Stocks and Soups', `Eggs', `Shellfish and Fish', `Poultry and Game', `Meat', `Appetizers, Salads, Side Dishes', `Breads', `Pastries', and `Cakes and Desserts'.

            There are simple recipes in this book, especially some of the famous French egg and salad recipes, but a large number of the recipes here are relatively complicated. That is not the same as being difficult. As Jaques very honestly states, the bread recipes in the book are relatively straightforward, but achieving a superior result is very difficult, because so much depends on subtleties in your flour, environmental conditions, and oven. Jaques is a better than average source of knowledge on bread baking and pastries, but I would suggest you read what he has to say on the matter and get books by baking specialists such as Nick Malgieri, Flo Braker, Sherry Yard, or Rose Levy Beranbaum to guide you through these subtleties.

            Unlike books by other major chefs such as Daniel Boulud on cooking for entertaining, Pepin's dishes are almost all standards of the French cuisine. There is very little here which was not cooked in France fifty or more years ago. This is entirely in keeping with this being a `greatest hits' book. A consequence of this selection is that the book offers superior recipes for dishes such as cassolet, leg of lamb, pastry encrusted baked fish, roasted chicken, blinis with caviar, and galantines, mousses, and pates which are very familiar to a large number of people, especially to the foodies among your friends and acquaintances.

            Like other very good culinary writers such as James Beard, Julia Child, Shirley Corriher, and Tom Colicchio, you must weigh every word, as there is no telling when the next sentence will contain an important tip on culinary technique, such as the little device of rolling hard boiled eggs around in the pot after cooking to crack the shells then cover with cool water to improve ease of peeling the eggs when they cool down. This attention to detail that is so thrilling to find is also so disappointing when you find obvious little mistakes in well respected writers work. There are no disappointments here.

            With a list price of $40, this is Jaques' coffee table book that you can get to join your other big volumes from Eric Rippert, Thomas Keller, and Jeremiah Tower. In keeping with the celebratory theme, the menus include many wine recommendations, many of which are somewhat fussy, but for all of which Jaques freely allows any reasonable substitution of a wine with similar affinities. Not being a major wine fan, I found the wine suggestions very easy to overlook.

            Pepin is the gold standard for active American culinary writers. There is practically no room for arguing with his technique and recipes. So, the issue with this book comes down to how well you like French recipes and how many Pepin books do you already own.

            My personal opinion is that this is not his most valuable volume. For pure technique, I think the `Complete Techniques' volume offers a lot more culinary wisdom for the money. And, I think the `Julia and Jaques Cook at Home' volume offers much more entertainment for the money. So, I would rate this third after these volumes. This is no reflection on the PBS TV series, it is only an evaluation of the book. If you loved the series and wish to preserve these memories, get the book. It will not disappoint you. The book is certainly a lot better than his quick cooking, economic cooking, and healthy cooking titles, as these smack of being titles prepared to ride current trends in cookbooks. Although, Pepin does have special credentials for fast cooking recipes, as his partner, Pierre Franey was a long time expert on the subject.

            Highly recommended if you are a big Pepin fan, like to cook to entertain, or have no other books by Pepin.

            As a budding foodie, I have watched this excellent PBS series many times. This last run through I noticed something that completely freed my perfectionist cooking tendencies. It's just amazing watching Pepin at work. He's excellent but certainly not always precise or perfectionist. A little of this, a bit of that, or a pan a little too hot has all shown me that good cooking is like what a great artist told me once. "Being a good artist has nothing to do with perfection. It's just a long series of covering up your mistakes." Having the companion book to the series has helped me tremendously to lighten up and have fun. This book is filled with great recipes, many of which can be customized to your personal tastes. The photos are an excellent teaching tool and reference. Start with good quality ingredients, have everything prepared and ready to go, follow along in the book and have great time. This book has been worth every penny.

            After living overseas and in SanFranciso, I moved to the Southwest and was unable to buy the European breads I was used to eating; then I discovered this book. The bread recipes are very simple to prepare, and my family and friends just love them. If you love wonderful bread and don't have alot of time to bake, these are the recipes for you!

            My uncle sent me this book out of the blue and when I received it I was thrilled. I have been cooking most of my life and over the last several years have become more adventurous. This book has many wonderful recipes of which there are ingredients I can't get at the local grocery store. It gives me a reason to shop gourmet. I have made it my goal to make every recipe in this book. I am especially looking forward to making the Stuffed Salmon in Flaky Dough. It looks quite impressive.

            I bought the book after watching a few episodes from the series
            on PBS. The book is loaded with great recipies and as usual,
            loaded with technique. There are a lot of photos that help to illustrate the technique that he is teaching but very few photos of the finished product. Maybe the finished product and how it looks is best left to the cook's creativity but I rely upon the finished prduct photos for motivation.

            I'm still very happy that I bought the book.

                4 out of 5 stars A Good Reference For QQQ's Investors!.......2002-12-31

                Here's a book for the tech investor who wants to know what the different companies in the NASDAQ 100 do. There's a simple company profile, earning projection, revenue growth chart, and key financial ratios.

                Since all of these things can be gotten over the Internet these days, the main benefit of this book is that it is in book form and you can pick it up for stock ideas in the tech area (except for IBM and HPQ).

                The only thing that I found interesting was the author's Top 25 Picks for 2002-2003. This list includes all the big cap tech stocks except QCOM and has some comments about each choice. There's also an interesting discussion about the QQQ's and the Rydex funds and how it might be better for most investors to simply buy these instead of riding the ups and downs of these highly-volatile individual issues.

                I would like to have seen a more lively format, but I guess this book wasn't meant for my entertainment. If you want to buy individual stocks within the NASDAQ 100, you will need more current information in addition to what is presented here.

                The Bottom Line: It's a handy reference.

                The Crisis of Care is moving away from the technological, managerial aspect of caring. The need is to restore the concern and compassion for the need of the care receiver. Persons care for the wrong reasons. If it is not the aspect of filling the prescribed attention to a patient, very often there is the one who is interested to help or assist because they feel a sense of moral commitment or the sense that it will make them feel good. The editors quote Wuthnow's survey report that 42% of Americans were interested giving themselves for the benefit of others. The percentage dropped to 15% when asked if they were willing to sacrifice to help another person." (1994, p.23)
                "From the time we were children, we were told by our parents and our grammar school teachers to "Pay Attention!" Even though we have grown inured to this injunction and shrug it off, there are few things in life more important." (1994, p. 28) Restoring those concerns for the individual, the context of their situation and what it is that needs to be protected for the care receiver is important.
                Steven Covey in his writing cautioned against responding to the "Tyranny of the Urgent". In "The Crisis of Care," the chapter, "Teach Us to Care and Not to Care," says the caregiver who offers standardized responses to the needs or responds to that which gives only immediate relief, is not giving the full extent of care. There needs to be the caregiver who is will not only to pray for the receiver only, as an immediate answer to the problem, but who is willing to take the time to teach the receiver how to pray. This awareness of how to pray helps the person begin to understand that value can be found even in the experience of their suffering.
                Creating a context of care, listening and reducing isolation are all important in care giving. It is not enough to know the facts about a person or even the facts about their situation. The concern is that one knows the issues and reasons, which surround those facts. This is important whether it involves the student in the school or the patient wrestling with the quality of life. "From a theological standpoint, any notions of caring we might have grow out of our divine vocation, to reflect in our lives together in the world the character of God, manifest in his covenant love, (the compassionate behavior of God)."
                Phillips and Benner blend the use of narrative, dialogue and instruction to emphasize the strengths and weaknesses in present day care giving. The reoccurring issues of finding the context, the willingness to listen and the autonomy of the care receiver emphasize the point of the writing that care giving needs to move beyond the mechanical and technological response.

                Phillips and Benner have edited nine narratives written on "redesigning the structures and processes of our public caregiving institutions in order to better facilitate practices of caring," (vii) an excellent resource for those in the helping professions and for those who care. The narratives are actual circumstances with real people who practice within the caring professions. The authors invite the reader to examine the narratives in terms of the practices of care illustrated by them (vii). Because the narratives are written by practitioners and theorists who are experts in their field (10), each has spoken out against the objectification and commodification of persons and practices that mask contemporary helping professions (11).
                These are examples of the experts. Robert Bellah, a sociologist, argues for a rich, interpersonal world as he pleads for Americans to listen and see, by adopting an ethic of responsibility, of moral discourse, instead of control and commodification (13).
                Patricia Benner, a professor of physiological nursing, advocates that, "effective caregiving requires more than intent or sentiment. It requires skill and knowledge and being in relation with others in ways that foster mutuality, empowerment, and growth" (45).
                As a pastor and theology professor, Eugene H. Peterson describes the difference between genuine caring and control veiled as caring. Dr. Peterson believes that we are meant to open out toward our neighbors and open upward towards God, and that we can be whole and healthy humans only to the degree that we do this (69).
                Pediatrician E. Dawn Swaby-Ellis states that "whatever the competing factions my challenge is the same: to be effective, efficient, and empathic" (84). Furthermore, she believes that caring for patients must come out of true concern and love for them (90). Her personal caring relationship with her patients was deeply validated by her exposure to the biopsychosocial model proposes by George Engel and expanded by Paul Tournie to include the spiritual dimension. Although, Dr. Swaby-Ellis praises many of her teachers, she declares the Holy Spirit to be her greatest teacher. "It is one thing to be a Christian who wishes to live a life of obedience to God by showing love to mankind. It is another thing to integrate our faith into the fabric of our being so that our actions mirror our spiritual belief" (93).
                To Anna Richert, an educator, all teaching practice must help kids to grow through caring. Although there are increasing challenges and dangers educators deal with daily as they attempt to care by teaching in urban chaos, still "children need care and they also need to learn to care for one another. Ultimately they need to learn to care for themselves" (109). I agree with Richert that fundamental to teaching children to care is the fact that children "need to feel and be safe" which includes "needing to trust others, and having a sense that others believe in them" (109).

                5 out of 5 stars To Care is to Listen.......2002-03-29

                Insightful, humane, challenging, reflective, and practical are words that describe, The Crisis of Care: Affirming and Restoring Caring Practices in the Helping Professions, edited by Susan Phillips and Patricia Benner. The nine chapters followed the format of a story narrative followed by a pertinent and complimentary discourse. Phillips wrote: "Teaching, nursing, medicine, psychotherapy, and pastoral ministry are written of from the inside in terms of excellent practice" (vii). Inevitably, "care is relational, creating more than we expect and at other times showing us the limits of `helping'" (10).
                Phillips' book is a positive example of how ritual and relationship can fuse to embrace the unique personhood of students, patients, clients, and parishioners; thereby, humanizing what has been viewed as merely objective clinical processes and procedures. The distinguished practitioners and scholars who contributed stories and essays are to be commended for their efforts in providing authentic care themselves and in sharing their insights.
                The stories are powerful. A Holocaust descendant's anxiety is relieved because the psychotherapist heard with an inner ear, the patient's real and heretofore unexpressed need. Attention to the not said and the unseen on the part of the caregiver is of terrific value when providing care. An abortion case is reviewed with some of the multiplicity of implications that are involved. "Sammy," a six years old Amish boy, kicked by a mule, is restored to health. The preparation of a simple meal and the opportunity to learn the history of an African-American woman's family (Ambrosia Jones) helped pave a road to recovery. Death by choice in a chapter of the same name is provocative. Blake's story is about the unattractive child. It presents the compassionate value of a mother's love, and reveals a doctor's openness to in-seeing and in-hearing, and thereby some profound learning occurs. Mrs. Clark's paralysis and the visiting male nurse's ritual and relationship pastoral care story are inspiring.
                The insights are powerful. Benner wrote: "If we were able to replace our disease care system with caring practices that foster illness prevention and health promotion so that clinical wisdom could be fostered from caregivers and receivers alike, we would alter dramatically how we are spending our health care dollar" (59). Eugene Peterson described the pastor's task: "Pastors identify God in the action, God in the language" (74). Peterson's challenge was to learn when to care, and not to care. The Atlanta, Georgia pediatrician, Dr. E. Dawn Swaby-Ellis learned: "My greatest teacher in learning how to care has been the Holy Spirit" (93). Clinical Psychologist Mima Baird echoed the sentiment by contributing: "To care is to listen; to hear is to care" (96). Teacher Anna Richert noted that it lies within the ability to make authentic connections that the capacity for care is enhanced, and by implication, the significant educable moment can be realized. Professor Joel Green draws attention in his summary statement: "Just as we know the character of God only in the concreteness of our lives, especially within the community of God's people, so we recognize the threads and hues of human reflection of God's character only in the fabric of social life in the everyday world" (165).
                Quickly paced, tightly written, and imaginative stories, and longer, but nevertheless interesting reflections and observations, make The Crisis of Care an excellent addition to every caregivers memory storehouse and personal library.

                The Crisis of Care is an insightful examination of the state of care in the helping professions. The editors argue: "... that examining our exemplary caring relationships can prompt us to redesign the structures and processes of our public caregiving institutions in order to better facilitate practices of caring" (1994:vii). Utilizing essays from practioners and scholars, the editors have collected narratives and scholarly discourses that address the practice of care in various helping fields and from the perspective of various academic disciplines. While the reader may not fully agree with positions taken by various writers concerning such issues as euthanasia, abortion, and the philosophic basis of ethics, the writing on the whole is good. The narratives frequently touch a sentimental chord. One good example is W. Thomas Boyce's "Beyond the Clinical Gaze" (1994:144-148). Eugene H. Peterson's essay "Teach us to Care and not to Care" is brilliant (1994:66-79). Peterson challenges the reader to not defile the holy. Joel B. Green's essay "Caring as Gift and Goal: Biblical and Theological Reflections" was also outstanding (1994:149-167). Green covered much biblical and theological ground clearly and with keen insight. Robert N. Bellah's "Understanding Caring in Contemporary America" was awesomely insightful (1994:21-35). He explores the themes of placing caring over exploitation and placing attention over distraction.
                While, to me, some of the narratives and essays were not as excellent as those I mentioned, on the whole the book is worth reading. I recommend it.

                                  Going through having a loved one with Alzheimer's is enough, but that's not all that happens to most of us during that time; there are many other family concerns, and so many stories to tell. Mary Walsh tells them all in this wonderful book that will make you laugh at times and cry at others. Mary's husband's grandmother and her Alzheimer's is the focus of this book, and it is around this that most of both the funny and tearful stories revolve. Mary and her family cared for "Gram" during the years I was with my mother as her caregiver. "Gram" died in a nursing home in May 1996, in the month following my mother's death, and there are many similarities. Unlike me, however, but probably like many of you, Mary had the concerns of four generations of family members who were surrounding here. If you are a caregiver or former caregiver of someone with Alzheimer's, I'm sure that you, too, will find much in common with this family's story. Mary presents it delightfully, in a very readable manner which includes conversation, journal entries, and her poems. Through all the tears and the laughter, the family's strong faith shines through, and if you are a caregiver, you will be encouraged through reading this book, and you will know that you, too, can make it.

                                  As I started this book, I did not expect to be so drawn into it. It is a quick read-mostly because you are so drawn into the life of this family that you won't want to put it down. It not only deals with a family member with Alzheimer's, it deals with every member of the family, and into Mrs. Walsh's extended family as well. As I finished this book, I felt I knew the Walsh family personally! As a person in the medical field, I encouarge EVERY healthcare provider to read it to get a firsthand look a what the family and patient go through...then let it guide you be a more compassionate person. As a child of aging parents, it is a must! It gives such insight and respect into an older person's world. As a spouse it gives such encouragement that if the Walsh's marriage could withstand years of testing, there is hope that marriages can survive trials and tribulations in every day life. As a child of God it gives such a reaffirmation of God's abundent love and grace to those that will trust in Him. Bravo, Mrs. Walsh, I look forward to your next novel!

                                  Crawling into bed at midnight, I thought to at least begin the first chapter of this book. After several hours of crying and laughing, while trying not to wake my husband, I finally turned out the light at 3 in the morning.

                                  Who would have thought a book about Alzheimer's would be so fascinating? That's because it's more than what it seems. A poignant story of not just the subject, Gramma, but also what takes place all around her as a family seeks to honor a promise, care for an ailing, confused loved one all the while raising a family and dealing with their fair share of life's trials. Told with depth, emotion and much humor! A good book for anyone who needs to know that God is in control no matter what! I highly recommend this book!

                                  On first opening this book I intended only to glance at the contents page and last chapter (my usual procedure). An hour and a half later, I had to feed my family but came right back. Around 1 am I nodded off -- near the end -- and finished it the next evening.

                                  Mary Walsh a gifted story teller. This isn't an action adventure but she kept me turning pages. Dealing with Grandma's Alzheimer's dominated all the events of her family's life for six years. The Walshes are devout Christians and the importance of their faith during this journey is evident.

                                  This book is written in a simple, warm and engaging style and I highly recommend it. If you've lived with a loved one's Alzheimer's, you'll smile often in recognition. If you know little about dementia, you'll wonder if their situation was typical. It was. If you're dealing with Alzheimer's now, you'll find here an encouraging friend.

                                  The beautiful cover and overall book design emits warmth and calls you to the story inside. By contrast the title is, well, boring -- almost guttural to say. A bit of errata slipped through here and there in this first edition -- some page numbering and the like. But you won't notice for the tears in your eyes -- now from laughter -- now from cries.

                                  Family -- Journey -- Alzheimer's -- These words, when together, often mean a family journey alone. Some of you know what I mean...

                                  Here is the author's ONE LINE DESCRIPTION that got the publisher's eye.

                                  "One Family's Journey through Alzheimer's" is the story of a young families well intentioned promise to care for their aging relatives that quickly shifts to an all consuming Alzheimer's caregiving journey and finally. Through an onslaught of unexpected events and volatile, very public, social issues become a fight for their very survival as a family."

                                  What could this be all about? -- from chapter 26 entitled....

                                  - I Wish You Hadn't Asked That

                                  "The following Monday morning I was attempting to get things in perspective. Ed had gone to work. I was standing at the sink doing dishes, thinking about all that had happened. I noticed two well-dressed men walking toward the door. I was not in the mood to be proselytized."

                                  This is a delightful, brightening book and a very, very true story. Highly recommended.
